Fresh Feast at Kapuluan Vista Resort

Heading towards Ilocos Norte on our great Northern Philippines adventure, I was most excited about going to Pagudpud where we would be staying at the Kapuluan Vista Resort. I had been hearing great reviews from my friends that had been there and apart from the uncooperative weather, I was not at all disappointed.

Located along a turquoise ocean front a few minutes away from the famous “Blue Lagoon”, the resort is well known as a surfers getaway. Unfortunately, we didn’t get a chance to surf but soon discovered that even non surfers will find plenty of reasons to travel almost 12 hours by bus to this northern paradise.

Kapuluan Vista is pretty much everything I’d want a beach resort to be: simple, laid back and eco-friendly. The resort had a minimalist structures that infused natural elements such as plants and flowers into the design, keeping the place rooted in the surrounding beauty of Pagudpud. It’s also worth mentioniong that in the last year, the resort produced only 10 bags of garbage with their efficient, organic waste management system. Way to go green!

I loved the islander feel of the place which wrapped me in good vibes. It was a treat to kick back and enjoy the minty margarita welcome drinks as the owners, Mike and Alma Oida, warmly greeted us into their beautiful resort.

I quickly forgot the cold wind and rain surrounding us, as we sat down to an organic, home-made, 5 course meal they offered at the restaurant. Most of the vegetables and herbs that were used in the dishes were organically grown in their garden within the resort. The tasty dishes and fresh flavors of mint, cilantro and garden greens filled our bellies and warmed our weary spirits after a long, stormy day on the road.

By the end of this sumptuous meal I had made my verdict: forget surfing, next time around I’m definitely coming back to Kapuluan Vista for the food!
